Light, refreshing, with hints of citrus, apple and peach, Ca’ Secco doesn't overpower the palate and goes nicely with anything from pizza to seafood and it's heavenly with oysters.
The famous “Bellini” (Venice 1948) : 2 ripe pureed white peaches (or peach nectar) + 1/4 ounce simple syrup + 1/4 ounce lemon juice +16 ounces of chilled Ca’ Secco.
This zesty, nearly dry white wine, comes from an unusual mix of grapes: Chardonnay, Sauvignon Blanc, Riesling, Gewürztraminer and Muscat; fermented a second time in pressurized, temperature-controlled tanks, where it becomes sparkling before bottling.
